You’ll know you’re close when you see the smoke rising from fires stoked by dried coconut husks. Settle in and consider ordering a refreshing beer – brews here are typically on the lighter side and pair nicely with the intense flavors. Speaking of flavor, you’ll want to make sure to try some sambal sauce with your dish. Keep in mind that no two sambals in Indonesia are alike, and chefs pride themselves on their unique takes on this piquant condiment made from chili. There’s also a version called sambal matah, which incorporates lemongrass for even more of a kick.
The set-up here is simple, with just a few wooden tables right on the beach. Grilling is the ideal preparation for these freshly caught ingredients, balancing their flavors with just the right amount of smoke and spice. Your meal is served alongside rice and vegetables for a little contrast, completing this classic Jimbaran seafood feast.
